Cascina Cairel
The road that winds its way up the ridge which
runs from Alba towards Bossolasco, reaches Cascina
Cheirello, home of the Cairel wines. These Langhe
(hills) surrounding Alba are one of the most famous
quality wine-growing areas in the world. Seventeen
hectares of vineyards spread out around the charming
farmhouse that houses Giuseppe, Luigi, and Stefano
Rivetti's small winery. These three dedicated
winemakers, with skillful handling of the vineyards,
low yields and scrupulous wine-making techniques,
work to obtain wines of the highest quality.
17 Hectares of vineyards, plus a small leased
parcel ( Rio Sordo estate ) in the Serralunga
district of Barolo. Total production averages
5,000 cases annually - Barbera, Dolcetto, Nebbiolo,
Arneis, Chardonnay, Moscato and Barolo.

Arneis Langhe
The name Arneis in the dialect of the Langhe hills
means "rascal" because of its unpredictable behavior.
The vines of this grape were noted in these hills
as early as the 15th century, but not too long
ago it had practically disappeared.
The terrain of the Langhe is well suited to this
dry white of scant scent but lively with fruit
flavors which in well-made Arneis lasts long enough
to mingle with the almondy aftertaste. The Cairel
Arneis Langhe has a grand structure that is both
vivacious and elegant. It is a pale straw-color
with an intense perfume of fresh fruit and flowers.
Chardonnay Langhe D.O.C.
The Chardonnay is the foremost quality white grape
varietal in the world, whose wines are distinguished
by their finesse and great aromatic strength.
This varietal is dominant in all the great white
A.O.C.Ős of Burgundy in France and is said to
have originated there.
This international vine has found an ideal habitat
on the hills of the Langhe.
The result is a beautiful wine, transparent in
color, sometimes with almost greenish tints. The
bouquet gives off such a scent of fruits that
you can almost see them by the basketful. Both
the aroma and the taste have certain characteristics
that evoke the cool, polished smoothness of marble.
This is an excellent wine to be enjoyed as an
aperitif or with antipasti, delicate first courses,
and fish. Serve chilled.

Freisa Langhe
Livened by a light sparkle, frizzante, with an
aroma of roses and raspberries, Freisa, from the
vineyards "Fontana," is a wine with a fresh, dry
flavor and an intense ruby-red color. Bursting
onto the palate with a pleasantly dry taste, it
is an outstanding wine with flavorful dishes,
cold meats, and medium-strong cheeses

Dolcetto d'Alba Vigneto Mandorlo D.O.C.
Dolcetto grapes thrive in the high, cool hills
of Alba, where the grapes ripen early. In Piedmont,
Dolcetto is the most stylish of everyday wines.
Among the distinctive red wines of Alba, the taste
of Dolcetto may be the easiest to acquire. When
young, it has a deep mulberry color and a hint
of newly fermenting grapes on the nose, but rich
with mellow fruit flavors of almost chocolate-like
sweetness, offset by a dry mouth tingling undertone.
Cairel's Dolcetto d'Alba from the vineyard of
"Mandorlo" is the ultimate of Dolcetto's with
an intense perfume of fresh flowers and mature
fruit.

Barbera d'Alba Vigneto Caveia D.O.C.
Alba has long been known for its production of
fine Barbera. This area yields wines of such unexpected
class that for the first time in memory this wine
is on the verge of becoming chic. Cairel's Barbera
d'Alba from the vineyard "Caveia" is a well-balanced
wine with charm and generosity.
Aged in oak casks, the result is a more round,
full, and complex wine. It has a fragrant perfume,
reminiscent of dried flowers and herbs. It is
a beautiful ruby red in color with a taste that
is fresh and full.

Nebbiolo d'Alba Vigneto Raine D.O.C.
Nebbiolo is considered one of the most beautiful
and noble wines of the world. Grown in the hills
of Alba, the grapes are picked early when the
components are in better balance. Fermentation,
both alcoholic and malolactic, are now usually
conducted under controlled temperature. Even traditionalists
consider stainless steel fermenting vats essential
and most have shortened contact with the skins
to less then one month. When aged for a spell
in casks, Nebbiolo can show the variety's innate
nobility and enviably drinkable style.
Cairel's Nebbiolo d'Alba, from the vineyard "Raine,"
shows its typical character in a persistent and
intense perfume of roses and dried flowers. The
color is a magnificent garnet red, vivid, and
intense, with shades of orange.

Barolo
The hills of Alba afford the Nebbiolo grape a
long growing season which is necessary for this
particular varietal to achieve full ripeness.
To endure the damp foggy mornings of these hills
in late October, nature has provided the Nebbiolo
with a thick tough skin. It is in this skin that
the tannins that are characteristic of the wine
of the Nebbiolo grape reside.
The production of the Cairel Barolo is conducted
with meticulous care, beginning with the crushing
of the grapes which is done very slowly and under
controlled temperatures. The fermentation of the
juice begins in cement tanks for about one month.
The juice is then put into large 60 hectoliter
Slavonic oak barrels to mature for approximately
3 years. Following this three year period of maturation
it is bottled and left to rest for an additional
6 months. A total of 4 years goes into the making
of this wine before it is released.
This wine is a beautiful ruby, tending to blackberry
color, but with aging will tend to a medium garnet.
One will detect delicate aromas and tastes of
violets, wild berries and even licorice and spices
in this exquisite Barolo.
